Cooking for the week.. or more?
| I decided to make Sunday afternoon into a little cook-a-thon. I have to say, both recipes turned out great! I find little ideas all over the web and then leave out the stuff I don’t like (like cilantro and green peppers) and mix in the things I do. |

My first concoction was a crustless quiche inspired by the mini bites over at eggface.I thought I’d put some grated parmesan in the bottom of each muffin tin thinking it would act as “crust” but instead it just got cheesey and melted in – but it was awesome!
I was cleaning out the fridge so I used up my ham, eggplant, mushrooms and cheese. YUM! |
| Next up: MissMaryMac Turkey Blob Globs! Hmm, maybe I need to rethink that name.
I made some ground turkey, veggie, cheese globs.. kinda like meatloaf I guess? I basically mangled a turkey meatloaf recipe. Since I’m not a huge fan of tomato based stuff, I added some Fage yogurt to the ground turkey, Pureed eggplant, mushrooms, onions and threw in some mozzarella. Topped each little glob with a mushroom. They were AWESOME drenched in salsa and I was definately full. I was able to eat about 2.5 oz – so almost 1 muffin tin. |

Nothing simpler than packing lunch by just grabbing a little mini-tupperware from the freezer and popping it in the lunch bag. A little side of salsa and we’re good to go.
I ended up freezing over half of each batch so I’m set for a few weeks! And that’s it for toda’s little mini-cook-a-thon. |
